Ise udon is one of the local dishes that have been handed down from the Edo period in the Ise region of Mie prefecture.

In the olden days, it spread as a food to entertain worshipers who came to Okage-mairi.

This is an Ise-specific udon that is eaten by dipping the thick noodles, which are unusual for udon, into a special soup with a strong dashi stock.

The soft, thick noodles are so fluffy and chewy that they can be easily cut with chopsticks, so they are recommended for small children and the elderly.

Soft texture unique to Ise udon

“Ise udon” is made by dipping soft, thick noodles into a special sauce made with tamari soy sauce, high-quality bonito flakes, niboshi, and kombu dashi.

It is often misunderstood as "soy sauce is spicy" because of the black color of the soup, but it is a sweet flavor with strong dashi stock.

It stands at the opposite end of the spectrum from Sanuki udon, which is characterized by its firmness.

It has a soft and chewy texture, so it is recommended for small children and the elderly.
